Back to the name/alias thing. Yes in the movies he never shied away from giving his real name but that's because it's a creative choice they made. In the books he always had aliases, the two main ones being Beach and Boldman.
As for him checking in under an alias then using his real name. He hesitated introducing himself as James Bond because though he did let Le Chiffre know he was there he wondered who exactly else knew he was Bond (who's CIA, who's working for Le Chiffre). In that scene when he hesitated in delivering the "Bond, James Bond" line I see it as him pretty much deciding that he would rather everyone know to act as a catalyst for others to come out of the woodwork (Felix).
