Do you think there was an inconsistency in that the first movie implied Aunt May thought or knew Peter was Spider-Man and then in the sequel she didn't? Or did she not know in the first movie, just that he was doing something dangerous, or did she know in both?

The sequel hinted that she knew two or three times. The first one hinted that too when she was looking at the TV screen with such a worried look.
No inconsistency on that part.

I love that in his first encounter with Electro, he sees there's something wrong with him and doesn't go straight to the fighting. He tries to talk to him, getting him calm and helping him.

If the cop hadn't shot, maybe the story would be much different.
